Dandelions Cafe is gearing up for its grand reopening on January 3rd, with new owner Nick Brunel eager to incorporate his values and perspective into the establishment's iconic menu to elevate the cafe's offerings.
Neighbor Bivouac Coffee has been a long-time staple in the area, roasting their own sustainable coffee and taking pride in crafting each drink offered at their Tasting Room. When Bivouac’s owner René Steenvoorden and Nick first met, the synergy between the two felt natural.
René: “Evergreen is a tight community and Bivouac’s customers often express their interest in better food options in the Bergen Park area.” With a shared commitment to exceptional service and a dedication to delivering top-notch breakfast, lunch, and coffee choices, Nick and René want to fill this niche together.
Starting January, guests can hop back and forth between the two businesses as desired. “We want to make it easy for our customers. We don’t mind people ordering lunch next door and enjoying it at Bivouac, or Dandelions guests grabbing a specialty coffee drink from Bivouac while having breakfast”, René commented.
Both owners agree that they like to focus on their respective strengths. Nick adds: “Bivouac offers such an impressive coffee menu, I’m proud to encourage my customers to take advantage of our close proximity and let the coffee experts do what they do best. Combined with Dandelions' high quality breakfast and healthy lunch options, it’s a win-win for everyone.”
Customers should also keep an eye out for a number of community events being organized at the Hiwan Barn building in the new year. Bivouac Coffee is open 7 days a week (7am - 4pm). Dandelions will be open from 7am to 2pm Wednesday through Sunday.
