Hernan Ramirez Vasquez owns a 6.25-hectare coffee farm in the Cajamarca region of the Peruvian Andes. Called "La Palma, El Mango, El Laurel y La Fila", Vasquez grows Caturra, Bourbon, and Catimor variety coffee under a cover of shade trees. Like many of his fellow members of the cooperative Lima Coffees, Hernan holds organic certification for the farm.
Coffee is picked ripe and is dried for 25–35 days on patios. He's one of the first producer members of Lima Coffees to experiment with natural processing.
